Spinach Salad


N's aunt and uncle from PA brought us a whole bag of this beautiful, sweet-tasting spinach from their 2-acre homestead. Given my many and well-documented spinach growing difficulties I was quite jealous. Especially when T said this bag represented about 2 feet of garden row. We made a delicious black-eyed pea salad from it, my favorite spinach recipe.

Meanwhile, some creature pulled one of my two malabar spinach seedlings out of the ground. I found it yesterday, roots and all, lying a little ways away. Hoping for the best, I replanted it. Would you believe I found it pulled out again this evening? This must be the work of squirrels!!!!!!!

  3. Sorry, I meant to include a link but it slipped my mind. I added it. I should confess I never add the mustard greens, just straight spinach. I also leave out the onions. If I have a bumper crop of chives I might put some of those in instead. Delicious!
